Our Story

No gas.
Only fire.

Api-api is a mangrove tree. It grows in the brackish water between land and sea, and when it burns, it burns slow, hot, and clean. We drive it in from Kuala Selangor twice a week — nothing else goes in the pit.

Wok hei is the breath of the wok. The char, the smoke, the thirty seconds where the metal runs hotter than any stove can manage. We chase it dish by dish. It cannot be rushed, and it cannot be faked.

There is no gas line in this kitchen. Every plate that leaves it has touched fire directly — arang, embers, or open flame. It is slower. It is harder to control. It is the only way we know how to cook.
